Baked Italian Breaded Chicken & Potatoes

Steps
Slice Chicken breasts in half (horizontally or the "long way") to make them thinner for cooking and flavor.
Place sliced chicken breasts on a cookie sheet.
Using a spoon lightly smear & cover the top of the sliced chicken breasts w/ fat free sour cream.
Sprinkle Italian Style Bread Crumbs on top of the sour cream covered chicken breasts.
Sprinkle some ground parmesan cheese on top of the breaded chicken breasts.
Sprinkle with Salt, Pepper, Garlic Powder, and Italian Seasoning.
Place chicken breasts in oven set to 375 degrees.
bake for 15-20 minutes until chicken reaches and internal temperature of 160 degrees.
While chicken is baking take the number of medium russet potatoes needed out.
Rinse russet potatoes to get rid of excess dirt.
Poke holes in potatoes using a fork or steak knife.
microwave on high for 3 minutes
flip & repeat for 3 more minutes.
continue process of flipping and restarting the microwave for 1-3 minutes until potatoes are cooked.
Garnish baked potatoes w/ fat free sour cream, a dusting of ground parmesan cheese, salt, pepper, and chives.
Serve with a side salad of mixed salad w/ diced cucumbers. Use a little bit of fat free italian dressing for flavoring and if you have added fats for your meal dust with a bit of sunflower seeds.
Ingredients
boneless skinless chicken breast (as many as you'd like to prepare per your needs)
Fat Free Sour Cream
Italian Style Bread Crumbs
Ground Parmesan Cheese (I prefer the Galic & Parmesan version)
Medium Russet Potatoes
